Basic ingredients are usually best for camping
Another advantage of our recipe is that all ingredients can easily be taken on a trip and stored in the camper van for several weeks. At the same time, they take up little space. This means that even if you are out in the countryside and don't have the opportunity to go shopping you can still look forward to a tasty meal in the evening. But this curry is also a treat on the campsite, especially if you want to eat outdoors and keep the kitchen in your caravan clean.

Quick camping recipes are for everyone! Our recipe is hearty and yet suitable for vegans. So no one misses out on this classic dish. Of course, you can refine the dish with fresh herbs, fresh vegetables or meat according to your own preferences.
Preparation of our one-pot lentil curry
You need the following ingredients:
A knife, a pot, a chopping board - that's all you need. And you should have the following ingredients on hand:
- Red lentils, 250 g (why lentils are healthy)
- Red onions, 1-2 pieces
- Garlic, 4-5 cloves
- Chickpeas, 1 can/ 400 g
- Coconut milk, 1 can/ 400 ml
- Chopped tomatoes, 1 can/ 400 ml
- Water, approx. 400 ml
- Ginger, thumb-sized piece
- Curry paste (red or yellow)
- Vegetalbe stock, 2 tsp
- Spices (z. B. cumin, chili or garam massala)
- Oil for frying
- Salt and Pepper
Preparation of ingredients:
Peel the onions and finely dice them on a chopping board. Tip: Only peel the onion but don't cut off the root at first, so that the onion remains stable in one piece when chopping.
Peel the garlic (tip: just put pressure on it by using the blade of your knife or the heel of your hand to easily remove the skin), halve it and cut it into thin slices.
Peel the ginger (works best with a teaspoon) and cut it into thin strips and chop finely.
Put the pot on the gas cooker over medium heat. Pour in the oil and heat it up. Then add the curry paste and fry for about 1-2 min, stirring constantly with a wooden spoon or spatula.
Add the diced onions and sauté for about 5 min.
Then add ginger and garlic and sauté together with the onions for another 2-3 min. until the mixture starts to slightly stick to the bottom of the pan. Now deglaze with the chopped tomatoes and stir until the bottom of the pot is clear again.
Add the remaining ingredients, i.e. coconut milk, water, vegetable stock and spices, stir well and bring back to the boil. Tip: To measure out the water, simply use one of the empty cans (400 ml).
Add the lentils, stir in evenly and simmer for 10-12 min with the lid on.
Stir occasionally so that nothing burns on the bottom of the pot. Then drain the chickpeas, add to the pot and simmer for another 5 minutes.
Finally, season with salt, pepper and your favourite spices.
Salt, pepper, chilli - add your personal touch to your dish
If the stew is still too watery for you, simply let it simmer for another 5 minutes. If you like it spicy you can add some chlli. Then let it cool down for a little while and serve.
Serve with fresh herbs (e.g. mint or coriander), sour cream or Greek yogurt. Just be creative - camping means freedom!
The lentils and chickpeas make this curry very filling and you shouldn't have to make an extra side dish. Of course, rice or fresh white bread still go perfectly with it.
